Broccoli and Avocado Soup

Creamy, refreshing and so easy to prepare, the Broccoli and Avocado Soup is packed with vitamins, minerals and antioxidants. It will be your new favourite soup.
- 1/2 tablespoon extra virgin olive oil - زيت الزيتون بكر
- 1 medium red onion (chopped) - بصلة حمراء
- 2 large garlic cloves - فصوص ثوم
- 1 teaspoon fresh ginger (grated) - جنزبيل
- 300 gram broccoli (about 1 medium head) - بروكلى
- 1 pinch ground cardamom - حبهان مطحون
- 3 cup water (or stock) - ماء
- 1 large avocado (ripe) - أفوكادو
- salt and pepper (to taste) - ملح و فلفل
Step by step
- Heat olive oil in a soup pot. Add onions and sauté on medium heat until soft.
- Add garlic and ginger and sauté for another minute.
- Add broccoli florets and stir for another minute.
- Season with salt, pepper and ground cardamom.
- Add hot water to cover.
- Cover the soup pot, and leave the broccoli to simmer on low heat until soft.
- Turn off the heat. Add the avocado and use a handheld blender to blend the soup until smooth and creamy. Add more stock or water if needed to thin out the soup and adjust seasoning.
- Serve warm
